Put olive oil in a saucepan over medium heat , add onion, garlic, Â chicken, chickpeas, salt, pepper, ginger, paprika, cumin and tomato paste.
Let cook over medium heat for about 10 minutes.
Add the grated tomato and let cook for 5 minutes.
Pour hot or boiled water to slightly cover the chicken (don’t add too much water).
Let cook on medium heat for about 30 minutes or until everything is cooked and the sauce has thickened.
Take out the chicken from the sauce and brown it in a frying pan with 1 tablespoon butter (that’s optional).
Serve the chicken in the chickpea sauce, garnished with chopped parsley.
