Easy Yogurt Cake

Ingredients
- 1 cup Greek yogurt (you can use any type of yogurt)
- 1 cup eggs (4 eggs)
- 1 1/2 cups granulated sugar
- 2 cups all purpose flour
- 1/2 cup vegetable or canola oil
- 1 tsp vanilla extract
- 1 tbsp baking powder
- Pinch of salt
- 1 tbsp powdered sugar for dusting (optional)
Instructions

First, preheat oven to 350°F.

In bowl whisk the eggs and salt.

Add in the sugar, vanilla extract and whisk more.

Add yogurt then the oil and whisk well for a minute or two.

Add the sifted all purpose flour and baking powder.

Mix well with a wooden spoon.

Pour the batter in a slightly greased pan (with oil). I have used a 9 inch round pan in this recipe.

Bake for about 40 to 50 minutes or until a knife inserted in the center of cake comes out clean. You may need to place under the broiler in the last 5 minutes of baking.

Let cool for 5 minutes.

Dust with powdered sugar (optional).
Recipe Notes
- The baking time depends on the size of your baking pan. If you use a larger baking pan, the cake will bake for less time.
- It depends on the size of your eggs, you may need more or less to fill up 1 cup. In this recipe I have used 4 eggs.
