Fried Smelts

Ingredients
2 lb smelts
ยฝ head chopped garlic
2 Ts chopped cilantro
1 ts paprika
1 ts tomato paste
1 ts coriander powder
1 ts cumin
1 ts olive oil
1 ts salt
ยฝ ts pepper
vegetable oil for frying
Flour

Preparation
1- First clean the smelts or let it be leaned by your fishmonger. Set aside.
2- Mix all the ingredients except the vegetable oil and the flour.
3- Marinate the smelts with the mixter. Let it catch all the flavors for about 30 mn minimum. The more the smelts is marinated, the better it tast.
4- Roll the smelts in the flour until well coated.
5- Heat oil in a frying pan over medium heat until hot. Fry the fish in a hot oil until crisp, two to three minutes each side.
6- Remove the fish to paper towel to drain oil. Garnish if desired with lemon and serve.

Algerian Chicken with chickpeas โ€“ Chtitha Djedj

This is one delicious dish that is served with any type of bread. The sauce has to be thick and just enough to dip a bread in it and mop it up. Chtitha Djedj is one of the dishes prepared during the holy month of Ramadan.

Ingredients

  • 8 pieces chicken pieces
  • 1 small onion, minced
  • 8 cloves of garlic, minced
  • ย 2 tbsp olive oil
  • 1 tbsp Paprika and 1 tbsp tomato paste
  • 1/3 tsp black pepper
  • 1/4 tsp cumin
  • 1/2 tsp ginger powder
  • 1 medium tomato, grated
  • 2 tbsp chopped parsley for serving
  • 1 tsp salt or to taste
  • 4 cups chickpeas, soaked overnight
  • Water

Instructions

  1. Put olive oil in a saucepan over medium heat , add onion, garlic, ย chicken, chickpeas, salt, pepper, ginger, paprika, cumin and tomato paste.

  2. Let cook over medium heat for about 10 minutes.

  3. Add the grated tomato and let cook for 5 minutes.

  4. Pour hot or boiled water to slightly cover the chicken (donโ€™t add too much water).

  5. Let cook on medium heat for about 30 minutes or until everything is cooked and the sauce has thickened.

  6. Take out the chicken from the sauce and brown it in a frying pan with 1 tablespoon butter (thatโ€™s optional).

  7. Serve the chicken in the chickpea sauce, garnished with chopped parsley.

  8. Enjoy.

Recipe Notes

  • To make the sauce spicy, add hot pepper (any) to the sauce or Harissa.
