Algerian Spring rolls- Beef Bourek

Algerian Bourek or spring rolls are very popular during the holy month of Ramadan. They are usually served with soup and come in different fillings. These crunchy spring rolls are filled with beef mixture.

Ingredients

  • 25 spring roll sheets
  • Vegetable oil for frying

For filling

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt or to taste
  • ยผ tsp black pepper
  • 1 cup chopped cilantro.
  • ยผ cup rice
  • 1/2 lb shredded cheese(cheddar, mozzarella or other)
  • 1 tbsp paprika
  • 1 tbsp tomato paste
  • 2 tbsp olive oil

Instructions

  1. Make theย filling First, soak the rice in a cup of hot water for about 15 minutes.

  2. In a saucepan, heat the oil over medium heat and sautรฉ theย onion and garlic.

  3. Season with salt, pepper and ginger.

  4. Add paprika and tomato paste.

  5. Add the ground beef, the chopped cilantro and parsley.

  6. Cook the meat for about 2 minutes and add about ยฝ cup water.

  7. Rinse the rice then add it to the beef mixture.

  8. Reduce the heat and let cook until the water is absorbed, for about 10 to 15 minutes.

  9. Adjust the seasoning (add salt if needed).

  10. Turn off the heat.

  11. Add the shredded cheese, and mix well.

  12. Let cool.

  13. Make the rolls – Separate each sheet of spring rolls. Lay one sheet at the time on a working board or a large plate.

  14. Put about 2 tabkespoons of the beef mixture in the lower center of the sheet.

  15. Fold the two sides of the sheet toward the center.

  16. Start to roll the sheet. Repeat the operation to all the spring rolls sheets.

  17. In a frying pan, heat the oil on medium heat.

  18. Fry the spring rolls or the bourek, fold side down.

  19. Fry both sides until golden.

  20. Drain the Bourek on paper towel.

  21. Serve warm with wedges of lemon if desired.

Garlic Shrimp burritos

Ingredients
8 to 10 count shrimps
2 large flour tortillas
2 ts olive oil
2 Ts classic ranch dressing
2 Ts shredded mozzarella cheese

For the salsa
1 medium tomatoe
1 medium avocado
3 green onions
ยฝ small lime
2 Ts chopped cilantro
Salt and pepper to taste
1 ts olive oil

For the Garlic Shrimp
8 to 10 shrimps
4 cloves garlic
1 Ts olive oil
ยผ ts chili powder
ยฝ ts paprika
Salt and pepper to taste

Preparation
1- First we mix all the salsa ingredients and set aside. You can add serrano chili or jalapeรฑo chili if desired.

2- Second , prepare the garlic shrimps. Sautรฉ the garlic in 1 tablespoon olive oil over medium heat for about a minute.
3- Add in the shrimps and the remaining ingredients.
4- If the mixture gets too dry, add 1 to 2 tablespoons water.
5- Cook for about 5mn stirring constantly.
6- Pour the garlic shrimps in a bowl and set aside.

Make the Burritos
1- On medium heat put about one teaspoon olive oil in a large skillet . Roast the tortilla on both sides. and set aside.
2- Lay the roasted tortilla in a large plate.
3- Put about 2 to 3 tablespoons of salsa.

7- Fold two sides (toward the center) and one end of the tortilla over filling and roll up to form a nice burrito.

8- Repeat the operation to the other tortilla.
9- Serve.
