Algerian Almond Cookies called Mchewek

Mchewek – Arabic ู…ุดูˆูƒ is an Algerian delightful cookie that is prepared for so many occasions. The Arabic word ู…ุดูˆูƒ (Mchewek) means thorny and because these cookies look thorny, they got the name from their appearance.

these Almond balls are garnished with a whole almond in the center of each one or with a red candied cherry.

After baking these cookies, you will put on each cookie about 1 tablespoon of baking honey or as it is called in Algeria Assila ( Arabic ุนุณูŠู„ุฉ). It is simply sugar syrup.

Mchewek is usually prepared with Almonds but it can be made with peanuts, Coconut , you name it.
It is soft on the inside and crunchy on the outside.

Algerian Almond Cookies called Mchewek

Ingredients

  • 2 sticks (1 cup) unsalted butter, melted
  • 1/2 cup powdered sugar
  • 1/2 cup coarsely ground Almonds
  • 3 egg yolks
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • Pinch of salt
  • About 2 cups all purpose flour (more or less)

Garnish

  • 1 egg white, beaten
  • About 1 cup coarsely ground Almonds
  • About 1/2 cup whole almonds
  • Candied red cherries(optional)
  • Sugar syrup( please refer to my recipe above)

Instructions

  1. In a large bowl, mix butter with powdered sugar.

  2. Add egg yolks, a pinch of salt, vanilla extract and lemon zest then mix well.

  3. Mix in the almonds and baking powder.

  4. Add all purpose flour gradually and mix by hands until you obtain a very soft dough (donโ€™t knead the dough).

  5. Form small balls of dough.

  6. Brush each ball with egg white or just wet them with your fingers (dip your fingers in egg white then wet each ball of dough with it).

  7. Drop the balls in a bowl of Almonds and make sure to coat them well.

  8. Place the coated balls of dough in mini baking cups.

  9. Transfer them to a baking sheet.

  10. Place a whole almond in the center of each ball.

  11. You can place a cut candied cherry in the center at this step or just make an indentation in the center, then you will place a cut candied cherry after baking.

  12. Bake in a 350ยฐF preheated oven for 20 to 30 minutes or until slightly golden. You may need to place under the broiler for few minutes.

  13. Immediately put about 1 tablespoon sugar syrup on each cookie. You may need to add more syrup for each cookie if it is quickly absorbed.

  14. Let the cookies absorb the syrup, then place each cookie in a clean baking cup for a better presentation.

Recipe Notes

  • You can coat the balls of dough with almond flakes instead of coarsely ground almonds.
  • Note that I blanched my almonds then roasted them in the oven first before grinding them coarsely.

Excellent Brazilian Brigadeiros with Almonds

The Brazilian dessert called Brigadeiros are basically made of sweetened condensed milk, butter and cocoa powder. They can come with a variety of toppings such as chocolate sprinkles, cocoa powder, and you name it!
I added almond powder to the basic ingredients and the result is excellent.
These gooey Brigadeiros are easy to make and can be a great treat in so many occasions.

Excellent Brazilian Brigadeiros with Almonds

Ingredients

  • 1 can ( 14 oz) sweetened condensed milk
  • 1 tbsp unsalted butter, at room temperature plus more to grease your hands
  • 1/4 cup SIFTED unsweetened baking cocoa powder(special dark)
  • 1/4 cup almond powder

Toppings

  • Cocoa powder or coconut powder or chocolate sprinkles or pistachio powder or your favorite topping

Instructions

  1. Put the tablespoon of butter in a saucepan.

  2. Place the saucepan over medium low heat.

  3. Add condensed milk.

  4. Add cocoa powder and mix with a wooden spoon for about a minute.

  5. Add Almond powder and stir constantly until the mixture thickens. It took me about 20 minutes of stirring to get the mixture to thicken.

  6. Once the mixture thickens and takes a while to fall off the spoon, remove it from the heat.

  7. Place on a slightly greased plate and refrigerate for about 30 minutes.

  8. Grease your hands with butter.

  9. Use an ice cream scoop or just a spoon to scoop a small piece of the mixture at the time.

  10. Roll each piece into a small ball.

  11. Place the ball in cocoa powder and coat it well or use any of your favorite topping.

  12. Place the Brigadeiros in mini baking cups.

  13. Enjoy.

Recipe Notes

  • For the Almond powder, I have blanched and toasted the almonds then powdered them using a coffee grinder.
  • The total time to make these truffles didnโ€™t include the chilling time.
  • I made 9 Brigadeiros that fit my mini baking ย cups from the cited ingredients. If you form smaller Brigadeiros, you will get more than 9.
