I wanted so bad to make my Heavenly peanut butter blossoms ( please see https://www.myexcellentdegustations.com/heavenly-peanut-butter-blossoms/ ) but I didn’t have Hershey’s kisses chocolate that day so that’s how I came up with these cookies. I have used the same recipe as the peanut butter blossoms but I added 1/2 cup all purpose flour to the dough and shaped my cookies differently.
These melt in mouth cookies are excellent and the add of Nutella took them to the next level.
This recipe makes about 15 cookies depending on the size of your cookies. The total time in this recipe did not include the chilling time.
After mixing the dough ingredients, form walnut sized balls. Cover the balls of dough with plastic wrap and let them chill in the refrigerator for about 1 hour (or less).
Place the stuffed cookies in a baking sheet lined with parchment paper and bake them in a 375℉ preheated oven for 8 to 10 minutes.
Note that if you want thin cookies, you can only use 1 1/2 cups all purpose flour and the result is also excellent, just like in the photo bellow:
Best Nutella Stuffed Peanut Butter Cookies
Ingredients
- 3/4 cup peanut butter ( creamy or crunchy)
- 1/4 cup granulated sugar
- 1/4 cup Brown sugar
- 1 egg
- 2 tbsp milk
- 1/4 tsp salt
- 1 tsp baking soda
- 1 tsp vanilla extract
- 2 cups all purpose flour
- 1/2 cup (1 stick) unsalted butter, at room temperature
- 1/2 cup Nutella (more or less)
- 1/4 cup granulated sugar for rolling
Instructions

Cream together the butter, peanut butter and the two sugars until smooth.

Add in egg, vanilla and milk then mix until well combined.

Pour in the sifted flour along with salt and baking soda.

Mix until well blended but not over mix. The dough obtained should be very soft.

Form walnut sized balls. Cover the dough balls with plastic wrap and let chill in the refrigerator for about 1 hour or less.

Roll each ball of dough into a small disk ( with hands).

Place about 1 tsp of Nutella in the center of 1 disc and place the other disc on top.

Seal the edges with hands and smoothen the surface of the cookie dough formed.

Put each stuffed cookie dough in a bowl of granulated sugar to gently coat it in both sides.

Place the stuffed cookies in a baking sheet lined with parchment paper and bake them in a 375 ℉ preheated oven for 8 to 10 minutes or until golden.
Recipe Notes
- You can make these cookies with 1 1/2 cups all purpose flour if you want thin cookies. The result is also excellent.
