Homemade Buttermilk Biscuits


We have been eating biscuits for the whole week. After testing several recipes, I ended up with this one, that I believe is the best recipe!
Once the biscuits ingredients are  just combined (make sure to not overwork the dough), place dough onto a floured work surface..

Shape the dough into a rectangle form and start the folding process, in order to obtain flaky biscuits. After 4 or 5 times of flattening and folding the rectangle dough, pat it into 1/2 inch thick (circle shape or rectangle, it does not matter at this step).


Cut out the dough into circles, using a cookie cutter.


Place cut out biscuits dough in a baking sheet that is lined up with parchment paper.


Bake in a 450 °F preheated oven for 10 minutes or until golden brown. Immediately brush them with melted butter.

Ingredients

  • 2 cups all purpose flour
  • 5 tbsp unsalted butter, frozen
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 1 cup cold buttermilk plus more for brushing the biscuits
  • 2 tbsp melted butter to brush biscuit after baking

Instructions

  1. Preheat oven to 450 °F.
  2. In a large bowl, sift in flour, baking powder, baking soda, salt and mix them well with a spoon.
  3. Grate the frozen butter and add it to the flour mixture.
  4. Use your fingertips to incorporate the butter to the flour mixture, until the mixture resembles coarse crumbs.
  5.  Add buttermilk and mix until just combined.
  6. Flour a working board and place the dough on it.
  7. Flatten the dough with hands or with a rolling pin. Shape a rectangle form and start folding the rectangle in half.
  8. Repeat the operation of flattening and folding the dough for 4 to 5 times (the layering process helps form flaky biscuits). Make sure to lightly flour the dough before folding it.
  9. Roll out dough to about ½ inch thick and cut it out into circles, using a cookie cutter(I have used a 2 inches diameter cookie cutter but the size is your choice). Make sure to dip the cookie cutter into flour to prevent it from sticking to the dough.
  10. Place cut out biscuits dough on a baking sheet that are lined up with parchment paper.
  11.  Brush the top of the biscuits with buttermilk.
  12.  Bake for 10 minutes or until golden brown (rack placed in the center of the oven).
  13.  Immediately brush biscuits with melted butter.
