Grilled Gouda Cheese Sandwich with Peppers and Caramelized Onions

Grilled cheese sandwich is one of the sandwiches I can make when I don’t have no idea what to eat. Adding Caramelized onions and peppers take the sandwich to the next level. The melted Gouda cheese, the sweetness of the onions and bell peppers along with a little spiciness of Anaheim pepper make this sandwich Deluxe!

It’s is better to make ahead of time the Caramelized onions and the baked peppers. I like the long bell peppers but you can use any type of peppers.

Grilled Gouda Cheese Sandwich with Peppers and Caramelized Onions

Ingredients

  • 2 slices of bread (any type)
  • 2 tbsp Caramelized onions
  • 2 long red bell peppers (any color will do)
  • 2 Anaheim peppers
  • Salt to taste
  • 1 tbsp olive oil
  • 3 to 6 tbsp grated Gouda cheese
  • 1 to 2 tbsp spreadable butter

Instructions

  1. First, prepare ahead of time the peppers.

  2. Wash the peppers and dry them with paper towel.

  3. Place the peppers in a baking sheet.

  4. Bake in a 400°F preheated oven for 15 to 20 minutes ( it may take longer if you have more peppers). Make sure to flip them over after the first 10 minutes of baking.

  5. Peel off the outer skin.

  6. Remove the seeds and internal ribs.

  7. Cut the peppers lengthwise into strips.

  8. Place in a bowl and season with salt.

  9. Add olive oil (1 tablespoon or more). Set aside.

  10. Prepare ahead of time the Caramelized onions, please see recipe link above.

  11. Grate the Gouda cheese.

  12. Now let’s assemble the sandwich.

  13. Place a cast iron pan over medium heat.

  14. Spread the butter on one side of each slice of bread.

  15. Place each slice of bread on the cast iron pan ( butter side down)

  16. Layer both slices of bread with the grated Gouda cheese( as much as you want).

  17. Top the first slice with Caramelized onions and the second one with baked peppers.

  18. Top both slices again with more grated Gouda cheese.

  19. Using a spatula, gently place one loaded slice of bread on top of the other to sandwich it.

  20. Gently press on top with a spatula for a minute or less.

  21. Flip the sandwich over and let grill until golden brown.

  22. Place in a plate and enjoy.

Recipe Notes

  • Note that I didn’t use all the peppers in the sandwich. You can eat the left over peppers as a salad or keep in the fridge for your next sandwiches.
