Middle Eastern Cream – Ashta

Ingredients
- 1 cup milk (regular or low fat)
- 1 cup heavy cream
- 2 tbsp fine semolina
- 2 tbsp cornstarch
- 1 tbsp granulated sugar
- 1 tsp orange blossom water
Instructions

In a saucepan over medium heat, Put milk, heavy cream, sugar, semolina and cornstarch.

Mix everything well. Once the mixture is heated and just started to thicken, reduce the heat to low.

Mix and stir constantly until the cream thickens ( for about 5 minutes or less).

Once the cream starts to bubble, remove from the heat.

Add orange blossom water and mix well.

Pour the cream in a dish. The amount of Ashta obtained is double the amount shown in the picture above.

Cover with plastic wrap to the surface. Let cool at room temperature for about 15 minutes.

Refrigerate for at least 2 hours, preferably overnight before use.
Recipe Notes
- Ashta cream doesn’t have much sugar as it is used in so many desserts that require the add of sugar syrup, honey, etc. You can add a little sugar if you like.
