Vegetable Macรฉdoine

Macedoine salad can be made of fruits or vegetables. The fruits or vegetables should be cut into Macedoine cut (diced into small cubes).

In this recipe, I will be using the frozen mixed vegetables. I will be adding potatoes, cut into small cubes (macedoine cut).

Usually the vegetables are cooked a lโ€™Anglaise but I prefer to steam them, itโ€™s easier and faster.

Ingredients

  • 2 medium potatoes
  • 2 cups frozen mixed vegetables
  • Salt to taste
  • Mayonnaise to taste
  • Few leaves of Iceberg lettuce for garnish (optional)

  • 1 Roma tomato for garnish (optional)

Instructions

  1. First, peel the potatoes.

  2. Cut them into macedoine cut or dice them small.

  3. Place in a steam basket.

  4. Gently rinse the frozen mixed vegetables to slightly defrost them.

  5. Place the mixed vegetables on top of the potatoes.

  6. Season the top vegetables with salt (no worries the salt will penetrate to the potatoes in the bottom of the basket).

  7. Place the steam basket over a pot of boiling water on medium heat.

  8. Cover the vegetables with a lid and let steam until tender (about 15 minutes or so).

  9. Dump the vegetables in a bowl. Let cool at room temperature for few minutes.

  10. Place them in the fridge for at least 30 minutes or until completely cooled.

  11. Add about 1 tablespoon Mayonnaise to bind the vegetables together.

  12. Serve as is or with lettuce around and more vegetables.

Recipe Notes

  • You can serve your Macedoine with boiled eggs on top.
  • If you chose to cook the vegetables a lโ€™anglaise, cook them separately in salted water or together in order of firmness. Drain and place in ice cold water to stop the cooking and keep their color.

Savory profiteroles are made with Choux pastry just like the sweet profiteroles.

They can be filled with a variety of filling such as cheese, chicken, salmon, vegetables, you name it!

Savory Profiteroles are great for parties, brunch, picnic or any get together.

Cute and Tasty Savory Profiteroles

Ingredients

Choux pastry

  • 1/2 cup water
  • 1/2 stick (4 tbsp) unsalted butter at room
  • 1/2 cup all purpose flourย 
  • 1 tsp granulated sugar
  • 1/8 tsp salt
  • 2 eggs

Garnish

  • Sesame or Nigella seeds ( optional)

Egg wash

  • 1 egg yolk beaten with 2 drops water

Filling

  • 1 can (5oz) Tuna in water (drained)
  • 1/2 pitted black olives
  • 1/2 cup chopped cilantro
  • 1/4 cup capers
  • 2 large cooked potatoes (boiled in water)
  • 3 boiled eggs, cut small
  • 4 or more chopped green onions
  • Hot sauce
  • Salt, pepper to taste
  • Olive oil to taste
  • Lemon juice to taste

Instructions

  1. For the Choux pastry, please check the Profiteroleโ€™s link above.

  2. Once you have shaped the choux pastry into about 2 tablespoons blobs (make sure to space them), gently brush them with egg wash.

  3. Sprinkle some sesame seeds on top or Nigella seeds or both (optional).

  4. Bake at 400ยฐF for 15 minutes then reduce the heat to 350ยฐF . Continue to bake for 20 minutes or until the shells are golden. You may need to place under the broiler in the last 5 minutes of baking.

  5. Prick the pastry shells with a toothpick in two or three places to allow vapor to escape.

  6. Let cool completely.

  7. Prepare the filling.

  8. Mash the potatoes with a fork. Add salt, pepper (optional) and olive oil to taste.

  9. In a bowl, mix the mashed potatoes, eggs, drained tuna, green onions, sliced pitted olives, capers and cilantro.

  10. Squeeze some lemon juice on top then gently mix everything.

  11. With a knife cut the Profiterolesโ€™ shells open (horizontally) but not all the way through.

  12. Pour some hot sauce inside the shells.

  13. Spoon some of the filling inside.

  14. Enjoy.
